Ingredients

For four servings you need: three egg yolks; 50 grams of fresh light cream; 50 grams of fresh whole milk; 30 grams of stevia (or twice as much granulated sugar); half a vanilla bean.

Preparation

Start by pouring the vanilla seeds, stevia and three egg yolks into a bowl, then mix everything with a hand whisk.

After beating the eggs (which should not be whipped), put the milk on the heat: this should not come to a boil, but when it is hot, add the cream and vanilla pod, after which everything must be incorporated with the mixture prepared at the beginning.

Work for a while with a hand whisk and then continue with a wooden spoon.

At this point, lower the heat and cook “alla rosa”, taking care not to exceed the temperature of 80 degrees.

It is a type of cooking that is used for mixtures with eggs, precisely creams.

The heat should not exceed 85/88 degrees and the mixture should not come to a boil. The cream is ready when you take it with a spoon and blow it into small concentric waves similar to the petals of a rose.

Once this is done, the cream, which must still be liquid, is passed into a bowl placed inside another larger one, which must contain both water and ice.

Now it is necessary to let the cream harden, after which, when it has thickened to the right point, it will be ready either to be enjoyed as it is or to make desserts out of it.
