Preparation
Working time: approx. 30 minutes Resting time approx. 1 hour Total time approx. 1 hour 30 minutes
Prepare a soft yeast dough from the 400g flour, dry yeast, sugar, vanilla sugar, egg, butter and milk (knead well until the dough is nice and elastic).
Leave to rise in a warm place until it has enlarged significantly (duration approx. 30 minutes).
Make crumble from the 200g flour, sugar, butter and possibly .dem cinnamon with your hands or the dough hooks of the mixer. Place in a cool place but not too cold until further processing.
Lightly flour the yeast dough and roll it out thinly. Cut out circles (diameter approx. 10 – 15 cm) and place them on 2 baking trays (lined with baking paper). Brush the dough pieces thinly with milk. Place about 1 teaspoon (or a little more) of plum jam or another jam or poppy seed baking (there are no limits to your imagination here) in the middle of each dough piece. Now sprinkle the crumble generously over the dough pieces.
Let everything rise again until the dough pieces have visibly enlarged. Then bake.
Baking time: 15 minutes
Top/bottom heat 200°C preheated Hot air 180°C preheated
Gas mark 3-4 preheated
Allow
to cool on wire racks.
The indicated amount is enough for about 12 crumbles!
