Method:
- Preparation of the peels:

- Drying the peels:
- In the sun: Place the peels on a tray covered with a clean cloth and let them dry in the sun for 2-3 days, removing them overnight to avoid humidity.
- In the oven: Place the peels on a baking sheet lined with parchment paper and bake at 50°C for 2-3 hours, leaving the door slightly open to help moisture escape.
- With dryer: Set the temperature to 40-50°C and let it dry for about 5 hours, or until completely dehydrated.
- Grinding:
- Once dried, place the peels in a mixer, spice grinder, or blender.
- Blend until you get a fine, homogeneous powder.
- If necessary, sift the powder to remove any coarser pieces.
- Storage:
- Transfer the lemon powder to an airtight glass jar.
- Store in a cool, dry place, away from direct light.
- When stored properly, the powder will retain its aroma for several months.
Uses in the kitchen:
- Desserts: Add lemon powder to cakes, cookies, creams and muffins for a fresh and citrusy aroma.
- Savoury dishes: Use it to flavor risottos, marinades for white meats, fish dishes and grilled vegetables.
