Today I want to share with you a dessert that surprises you with its simplicity and incredible flavor. It combines prunes, walnuts and a smooth cream that solidifies thanks to the gelatin, creating a fresh and delicious texture. It is a perfect option for those looking for something sweet but nutritious, without too many complications.
Dessert base
- 300 g pitted prunes
- Warm water (for soaking)
- 200 g walnuts
- 15 g unflavored gelatin
- 40 g cold water (to hydrate the gelatin)
- 350 g sour cream or sour cream
- 60 g confectioners’ sugar
- 10 g vanilla sugar
Coverage
- 30 g chocolate
- 30 g hot cream (33–36%)
- Chopped walnuts for garnish
1. Prepare the plums
- Place the prunes in a bowl.
- Cover with warm water and let stand for 5 minutes.
- Drain and dry them well with kitchen paper.
2. Hydrate the gelatin
- Mix the gelatin with the cold water.
- Let it sit for 5–10 minutes until it swells.
- Then melt it gently (in a double boiler or in short intervals in the microwave).
3. Mix the cream
- In a large bowl, combine the sour cream with the confectioners’ sugar and vanilla sugar.
- Add the chopped walnuts and chopped plums.
- Quickly fold in the melted gelatin and mix well.
4. Setting up
- Pour the mixture into a mold.
- Cover the surface with cling film.
- Refrigerate for at least 4 hours or until firm.
- Mix the chocolate with the hot cream until you get a smooth sauce.
- Unmold the dessert and cover it with the chocolate sauce.
- Finish with chopped walnuts for crunch.
A creamy, fresh dessert, full of flavor and also healthy, as it combines fiber from plums, good fats from nuts and a soft cream that does not cloy.
