Ingredients

  • Sponge cake
    • 3 eggs
    • A pinch of salt
    • 80g (2.8 oz) sugar
    • Juice of 1 orange
    • Zest of 1 orange
    • 100 g (3.5 oz) flour
    • 1 teaspoon baking powder
  • Cherry layer
    • 150 g (5.3 oz) cherries
    • Juice of 1 lemon
    • 30 g (1.76 oz) sugar
    • 20 g (0.7 oz) cornstarch (cornstarch)
  • Pineapple cream
    • 200 g (7 oz) canned pineapple
    • 1 teaspoon vanilla sugar
    • 30 g (1 oz) cornstarch (cornstarch)
    • Juice of 1 lemon
    • 50g (1.76oz) condensed milk
    • 100 ml (3.5 fl oz) whipped cream

Step-by-step preparation

1. Prepare the soft and aromatic cake

  1. In a bowl, beat the 3 eggs with a pinch of salt until they begin to foam.
  2. Add the 80g of sugar and continue beating until you get an airy, clear and bountiful mixture.
  3. Add the orange juice and zest to give it that fresh Christmas aroma.
  4. Add the 100 g of sifted flour along with the teaspoon of baking powder. Mix with enveloping movements.
  5. Pour the batter into a pan and cook until the cake is firm and golden. Let it cool and cut into cubes or layers as you prefer.

2. Layer of cherries with a soft texture

  1. In a small pot, place the cherries together with the juice of 1 lemon and the 30 g of sugar.

  2. Take the mixture to a pot and add the 30 g of dissolved cornstarch, along with the juice of 1 lemon.
  3. Cook over low heat until thickened.
  4. Remove from the heat and add the 50 g of condensed milk.
  5. When warm, fold in the 100ml of whipped cream for a smooth, airy texture.

4. Assembling the dessert

In a bowl or individual glasses:

  1. Place a sponge cake base.
  2. Add a layer of cherries.
  3. Top with the pineapple cream.
  4. Repeat the layers if necessary and refrigerate to take shape.
