Ingredients
- Sponge cake
- 3 eggs
- A pinch of salt
- 80g (2.8 oz) sugar
- Juice of 1 orange
- Zest of 1 orange
- 100 g (3.5 oz) flour
- 1 teaspoon baking powder
- Cherry layer
- 150 g (5.3 oz) cherries
- Juice of 1 lemon
- 30 g (1.76 oz) sugar
- 20 g (0.7 oz) cornstarch (cornstarch)
- Pineapple cream
- 200 g (7 oz) canned pineapple
- 1 teaspoon vanilla sugar
- 30 g (1 oz) cornstarch (cornstarch)
- Juice of 1 lemon
- 50g (1.76oz) condensed milk
- 100 ml (3.5 fl oz) whipped cream
Step-by-step preparation
1. Prepare the soft and aromatic cake
- In a bowl, beat the 3 eggs with a pinch of salt until they begin to foam.
- Add the 80g of sugar and continue beating until you get an airy, clear and bountiful mixture.
- Add the orange juice and zest to give it that fresh Christmas aroma.
- Add the 100 g of sifted flour along with the teaspoon of baking powder. Mix with enveloping movements.
- Pour the batter into a pan and cook until the cake is firm and golden. Let it cool and cut into cubes or layers as you prefer.
2. Layer of cherries with a soft texture
- In a small pot, place the cherries together with the juice of 1 lemon and the 30 g of sugar.
- Cook over medium heat until they begin to release their juices.
- Dissolve the 20 g of cornstarch in a little water and add it to the mixture.
- Stir until you get a kind of thick compote that will serve as a juicy layer for dessert.
- Let cool.
3. Silky and sweet pineapple cream
- Blend the canned pineapple with the vanilla sugar.
- Take the mixture to a pot and add the 30 g of dissolved cornstarch, along with the juice of 1 lemon.
- Cook over low heat until thickened.
- Remove from the heat and add the 50 g of condensed milk.
- When warm, fold in the 100ml of whipped cream for a smooth, airy texture.
4. Assembling the dessert
In a bowl or individual glasses:
- Place a sponge cake base.
- Add a layer of cherries.
- Top with the pineapple cream.
- Repeat the layers if necessary and refrigerate to take shape.
