How to make the Cold Lemon Pie Recipe!
Ingredients :
the base :
- 500 g of shortbread biscuits
- 150g butter
- 6 cl of milk
- Zeste d’un citron
For the stuffing:
- 600g good quality lemon yoghurt, made with creamy whole milk
- 50 cl of unsweetened liquid cream
- 250 g of icing sugar
- Zeste d’un citron
- Yellow food coloring
For garnish :
- Zest of a lemon
Preparation :
Prepare the base:
- Cover a 26 to 28 cm tart mold with cling film.
- In a blender, mix the shortbread cookies, then put them in a bowl.
- Melt the butter with the milk, in a bain-marie or in the microwave.
- Pour the mixture over the shortbread biscuits, add the grated lemon zest and mix well.
- With the mixture obtained, cover the entire bottom and edges of the mold
pressing down firmly with a spoon, as you would for a pie. - Place in the freezer for at least 15 minutes.
Prepare the stuffing:
- Beat the liquid cream until very stiff with the sugar.
- Combine the yogurt and lemon zest, and stir until well combined.
- Divide the mixture into two parts and, in one of them, add the yellow coloring.
- Spread the yellow mixture over the cookie base in an even layer.
- With the white part, fill a piping bag and make tufts covering the entire yellow layer.
- Refrigerate for at least 3 hours before serving (you can leave the tart overnight).
- After three hours, carefully unmold, remove the film and place the tart on a tray.
- Let sit at room temperature for 5 minutes before serving, and sprinkle with the grated lemon zest.
- The cold lemon tart is now ready to enjoy. Enjoy your food !
