  • 50 g (1/4 cup) sugar.
  • 8 g (1 teaspoon) vanilla sugar.
  • 30 ml (2 tablespoons) of water.
  • 10 g (1 tablespoon) cornstarch.
  • 50 ml (1/5 cup) of water.
  • 9 g (3 teaspoons) gelatin.
  • 60 ml (4 tablespoons) of water.
  • 300 g (1.5 cups) heavy cream 33% fat.
  • 30 g (2 tablespoons) sugar.

Procedure:

1. Prepare the chocolate:

  • Melt the chocolate over low heat or in a double boiler until smooth.
  • Pour the melted chocolate into bonbon tins, muffin tins, or some other container and refrigerate for 15 minutes to solidify.

2. Cook the cherries:

  • In a saucepan, mix the cherries, sugar, vanilla sugar and 30 ml of water. Bring to a boil.
  • Dissolve the cornstarch in 50 ml of water and add it to the cherry mixture. Cook for 3 minutes while stirring constantly until thickened.
  • Cover with cling film and let cool.

3. Prepare the cream:

  • Hydrate the gelatin with 60 ml of water and let it sit for 5 minutes.
  • In a bowl, beat the heavy cream with the sugar until it begins to take consistency.
  • Melt the hydrated gelatin and gradually add it to the cream, mixing well.

4. Dessert assembly:

  • Remove the chocolate from the refrigerator and add a layer of whipped cream on top.
  • Add the cherry mixture as a top layer.
  • Refrigerate the dessert for 4 hours so that the layers set properly.

Councils:

  1. Use quality chocolate: This enhances the flavor of the dessert and ensures a more delicious result.
  2. Vary the fruits: You can substitute strawberries, blueberries, or the fruit of your choice for cherries.
  3. Creative presentation: Use Christmas-shaped molds to add a festive touch.
  4. Cooling Time: If you’re in a hurry, use the freezer to speed up the process, but make sure you don’t let the dessert freeze completely.
