  • 2-3 bay leaves.

  • 1 cup orange juice (or dry white wine).
  • 1 tablespoon dried thyme (or rosemary).

For the marinade:

  • 1 liter of water.
  • 2 tablespoons of sea salt.
  • 2 tablespoons of brown sugar.
  • 1 teaspoon peppercorns.
  • 1 teaspoon of coriander seeds.
  • 2 bay leaves.
  • 1 sprig of rosemary.
  • 1 cup of lemon or orange juice.

Procedure

1. Prepare the marinade:

  1. In a large pot, bring the water to a boil along with the salt, brown sugar, peppercorns, coriander seeds, bay leaf and rosemary.

  3. Add the lemon or orange juice and mix well.
