A former employee revealed his trick to achieve a crispy batter full of flavor.

With simple ingredients and an easy process, you can prepare an irresistible fried chicken at home.
Ingredients
- 6 chicken feet
- 1 bottle of wheat beer
- 1 teaspoon salt
- 2 cups flour (approx. 200 g)
- 3 tablespoons cornstarch
- 1 teaspoon oregano
- 1 teaspoon black pepper
- 1 teaspoon sweet paprika
- 1 tablespoon sugar
- 2 eggs
- 100 ml water
- Chopped parsley (to taste)
- Vegetable oil for frying (sufficient amount)
Preparation
- Place the chicken feet in a deep jar or bowl and cover them with the wheat beer. Add the salt and let them rest for 30 minutes in the refrigerator.
- In a bowl, mix the flour with the starch, oregano, pepper, paprika and sugar. I divided the mixture into two equal parts.
- To one of the halves, add the eggs and water, mixing until you get a creamy texture. Add the chopped parsley and stir well.
- In a pot, heat plenty of vegetable oil over medium heat.
- Remove the chicken from the beer and dry each leg well with absorbent paper.
- Run each leg first in the dry flour mixture, then in the egg mixture, and finally return to the dry mixture for a crispy batter.
- Fry the legs one at a time, making sure the oil is piping hot. Cook for 7-8 minutes or until golden brown and crispy.
- I drained on absorbent paper and served hot.
Tips for a crispier chicken
- Fry in small batches to prevent the oil from dropping its temperature.
- If you want a more intense flavor, leave the chicken in the beer for an hour in the refrigerator.
- Pair it with chips or a homemade sauce to boost the flavor.
