In this article, I&#8217;m going to focus on 9 crops you can plant in August that I consider to be the staple fall and winter crops. But I have included a list of other plants you can grow at the end of this article.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Your exact planting dates will be based on the expected first frost date. Planting for a good fall and winter harvest begins 6 to 8 weeks before the expected first frost date. So for most of us, the planting date will fall somewhere in late August.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Below are 9 crops you can plant in August that I consider to be the staple crops for planting a fall and winter garden.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">broccoli and cabbage<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">The first of the crops you can plant in August is actually a whole family! Plants from the Brassicaceae family are perfect crops that you can plant in August. Broccoli, cabbage, cauliflower, kohlrabi, and Brussels sprouts work great in the fall. One very important thing to keep in mind is that you should plant all of these crops from seedlings and not from seeds.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you plant from seeds, your plants will not have enough time to grow before cold weather arrives. Therefore, you should purchase seedlings from your local nursery or start your own seedlings indoors. You should plant these seedlings in the garden about 6 weeks before the first frost and should plan to protect them at the end of the season with a cloth cover or greenhouse.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/chou-kale.jpg\"><img decoding=\"async\" src=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/chou-kale.jpg\" alt=\"\" class=\"wp-image-1374\"\/><\/a><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">kale or kale<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">All types of kale also belong to the Brassica family, but it is a very different crop and deserves its own place on this list. Kale is one of the hardiest plants you can grow in the fall and winter. In fact, if you live in an area with mild winters, you can grow kale in your garden with just the protection of a piece of fabric. The other big thing about fall-planted kale is frost, and freezing temperatures soften the kale, drastically altering the flavor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Another good thing about kale is that it can be planted by seed or seedlings. Because you are using the leaves, it takes less time to get an edible harvest. Simply place the seeds in the ground 8 weeks before frost and you will have sweet, tasty leaves all winter long.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">The salads<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Lettuce will be one of your most abundant crops in the fall and early winter. In fact, I like growing lettuce in the fall more than in the spring. Lettuce is quite hardy, so moderate frosts and cold night temperatures are not a big problem. And the biggest difference with fall lettuce is that you don&#8217;t combat the impending summer heat that causes burning and bitterness.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You can start planting fall lettuce 8 weeks before the first frost. Continue sowing for up to two weeks. These later plantings can be used as seedlings or overwintered in a cold environment for very early spring harvests.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">chinese green vegetables<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Chinese greens are next on the list of crops you can plant in August. They are also technically part of the Brassicaceae family. But again, they deserve their own place on the list.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chinese vegetables like pac choy and tatsoi are very hardy and grow very well in the fall. The cool temperatures of fall give these vegetables great flavor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chinese greens can be planted from seed if desired 8 weeks before the first frost. For an earlier harvest, you can start by bringing them indoors and planting them in your garden when there starts to be room in your vegetable garden later in the fall.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">The carrots<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Carrots are one of our favorite late fall and winter treats. When temperatures begin to drop, an incredible change occurs within carrots. Plant starches are converted to sugars, making winter-harvested carrots sweet and delicious. They really are some of the best vegetables!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">August is usually a pretty warm time for most of us, which means you need to pay extra attention to your carrots to get them germinated and off to a good start. Plan to lightly water the seedbed once or twice a day.<br>When the weather really starts to turn cold in December, simply cover the bed with straw.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/%C3%A9pinards-potager.jpg\"><img decoding=\"async\" src=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/%C3%A9pinards-potager-1024x617.jpg\" alt=\"\" class=\"wp-image-1378\"\/><\/a><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">The spinach<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Fall planted spinach is an amazing plant. A little protection from the cold will give you 6-8 months of harvest. Planting spinach in August will give you a harvest starting in mid-October. If you mulch the bed, you can continue to harvest small amounts throughout the winter. Then, when spring arrives, the plants will return and offer a good harvest until May.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Start planting spinach 8 weeks before your first frost. Like lettuce, you can continue planting up to 2 weeks before the first frost. Late planting will not give you a harvest in the fall, but they will overwinter for an early harvest in the spring.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">chard<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Chard is another very resistant plant. Treat it the same way you would spinach. Early plantings will give you fall and winter crops. Late plantings will give you an early spring harvest if you protect the plants from the cold. All chard planted in the fall will overwinter. Expect fall and winter crops to consist primarily of small leaves. In the spring you will get a very early harvest of large heirloom Swiss chard plants.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/betteraves-potager.jpg\"><img decoding=\"async\" src=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/betteraves-potager.jpg\" alt=\"\" class=\"wp-image-1380\"\/><\/a><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">beets<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Planting beets early will give you a consistent harvest in late fall. Later plantings of beets will only produce the leaves, but will still give you something different to add to your fall salads.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To have beets to harvest, you should start planting 8 weeks before your first frost. Anything around 6 weeks before frost will only produce tasty highs.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/navets-potager.jpg\"><img decoding=\"async\" src=\"https:\/\/www.potager.biz\/wp-content\/uploads\/2020\/07\/navets-potager.jpg\" alt=\"\" class=\"wp-image-1381\"\/><\/a><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Turnips<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Previously known only as fodder for farm animals or as peasant food. Plant breeders have really improved the flavor and variety of turnips. Look for tasty oriental varieties and many other small rooty turnips.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Like beets, you&#8217;ll need to plant them early if you want to harvest roots. 8 weeks before your last frost would be perfect. Subsequent planting will only produce leaves.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Unless you live in an area with fairly mild winters, don&#8217;t plan on overwintering beets or turnips, they simply aren&#8217;t hardy enough to survive the winter.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Other crops you can plant in August:<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">The 9 crops I listed above are what I consider my \u201cstaple\u201d crops for my fall and winter garden. There are several other crops that can be planted in August and harvested in the fall and winter. They include the following:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Rocket<\/li>\n\n\n\n<li>Chicory<\/li>\n\n\n\n<li>Sorrel<\/li>\n\n\n\n<li>The radishes<\/li>\n\n\n\n<li>Parsley<\/li>\n\n\n\n<li>The endives<\/li>\n\n\n\n<li>Lion teeth<\/li>\n\n\n\n<li>Leeks<\/li>\n\n\n\n<li>La M\u00e2che (do not plant before September)<\/li>\n\n\n\n<li>the chicory<\/li>\n\n\n\n<li>The Mizuna<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>According to some authors, there are more than 30 different crops that you can plant in August to harvest in fall and winter.
