We’ll tell you when and how to harvest the perennial stem vegetable and how to proceed with the fresh stalks.

Harvesting & storing rhubarb correctly

The plants should be harvested after the second year at the earliest, or even better after the third year of life.

The harvest season begins in May and traditionally ends on June 24.

Today, there are varieties that allow harvesting from spring to autumn.

The stems are peeled before preparation.

Rhubarb can be kept in the refrigerator for a few days and can also be frozen.

When to harvest rhubarb?

Spring harvest: May to June 24

Cultivation period: perennial plant, divide & transplant from the 8th year

When exactly the rhubarb harvest begins depends on the variety and the weather in the course of the year. The tried-and-tested rhubarb varieties usually start in mid-May.

The harvest usually extends until St. John’s Day on 24 June.

After that, the oxalic acid content rises sharply due to the power of the summer sun, so that consumption is no longer advisable.

Because many people want to enjoy the refreshing acid kick of the stem vegetable for longer, breeders have taken on the problem.

In this way, varieties have been created that can be harvested as early as April to autumn. In addition, there are particularly early and late varieties as well as varieties that contain less oxalic acid.

Protect new plants

You only planted your rhubarb plant last year?

Then grant it a grace period during the first two to three years so that it can grow and develop strongly.

Only when it has many thick stems should you grab it. Of course, there is nothing to stop you from breaking off a stem beforehand to try it.

But larger yields are not to be expected until the third year of life.

Harvest a maximum of two thirds

In order not to weaken the perennial by watching, you should only harvest a third of the stems at the beginning. For well-established plants, the harvest volume may be up to two-thirds. If you break off too much, you weaken the rhubarb and have to take a break from harvesting next year.

Propagate rhubarb

If you can’t wait for the rhubarb to finally ripen, you can help yourself with a simple trick: put a large clay pot over the plant in early spring.

In well-stocked garden stores, special floating containers with lids for rhubarb are available. But a large clay flower pot will do the trick.

Apply mulch and compost around the plant and water it with lukewarm water. The clay stores the sun’s heat for the cold night hours.

Remove the lid of the rhubarb container every day or lift the pot to give the perennial fresh air. You can harvest just four weeks later.

Due to the lack of light, propelled rhubarb tastes particularly tender and also contains significantly less oxalic acid.

Because the propagation costs the plant a lot of strength, you should give it at least a year off afterwards. If you have several rhubarb bushes, you can alternate every spring.

How do I know if rhubarb is ready to harvest?

At harvest time, the petioles should be thick enough. This can vary from variety to variety. Don’t be shy – there is no such thing as too early with rhubarb. This is not fruit that has to ripen in the sun, but a pedunculate vegetable. And rhubarb is always sour – regardless of the time of harvest.

However, you shouldn’t be too late, because the stems become more and more fibrous and eventually woody over time. In addition, the oxalic acid content increases during the summer months.

How is rhubarb harvested?

The best harvesting method is to tear out or twist out the stalks with a jerk.

This sounds brutal, but it is healthier for the plant than cutting it off with a knife. Stalk attachments that remain tend to rot and can also serve as an entry point for fungal diseases.

Leave the leaves

During harvesting, the large leaves are cut off. Leave them on the bed instead of composting them. They serve as mulch that suppresses weed growth and retains moisture in the soil.
This way you save irrigation water and give the rhubarb back at least some of the nutrients you took from it when it was harvested.

Storing & Storing

Storage location: Vegetable compartment of the refrigerator

Shelf life: a few days

Rhubarb is best processed fresh. It is healthiest directly from the bed and tastes particularly aromatic.

With prolonged storage, the content of vitamins and minerals decreases and the stems become tough or dry. Nevertheless, the harvest can be stored for a few days. To do this, the lowest base of the leaves should be left on.

Bundle the spears, wrap them in a damp cloth and store them in the vegetable drawer of the refrigerator. If you don’t have enough space for the long stems, you can also place them in a large vase filled with water and place them in a cool place until they are ready.

Use & Processing

If you want to bake rhubarb cakes in winter, you can freeze part of the harvest. If necessary, clean and peel the stalks and cut them into pieces.

Those in a hurry freeze the rhubarb pieces raw. Blanching beforehand preserves the colour and consistency better.

Rhubarb is washed and peeled before further processing. To do this, use the kitchen knife at the bottom and pull off the fibers towards the top.

For older spears, the use of a peeler is recommended. Then cut the stems into fine slices or larger pieces.

The right choice of variety makes preparation easier

Today, there are also threadless rahbarb varieties or varieties whose stems are hardly fibrous. This eliminates the annoying peeling. However, you should not harvest the stems too late, otherwise fibers will form or the flesh will begin to lignify.

Rhubarb is a vegetable

Even though rhubarb is usually mentioned in the same breath as strawberries and is used almost exclusively for desserts, it is a vegetable from a botanical point of view.

But that’s purely a matter of definition – you can of course prepare your self-harvested rhubarb according to your mood and taste.

Rhubarb sweet prepared

The pleasantly tart-sour sticks have a tradition in the preparation of early summer desserts. They give sweet fruits such as strawberries or apples that certain something. Even our great-grandmothers cooked rhubarb compote and made rhubarb jam for the cold season.

The refreshing stem vegetable is also perfect as a cake topping, for sweet casseroles, tarts and strudel. Rhubarb sauce is popular with young and old for quark dishes, ice cream or puddings.

Rhubarb spicy prepared

Brave hobby gourmets also use rhubarb for hearty dishes such as rhubarb and asparagus salad. The stem vegetable also harmonizes perfectly with lamb ragout or a fish pan.

If you can’t decide between sweet and salty, you should try a rhubarb chutney. The fruity-fresh composition of rhubarb and refined spices goes perfectly with meat, fish and cheese.

Rhubarb Ingredients

On average, 100 grams contain only 13 calories. On the other hand, they come up with a lot of potassium and a medium content of vitamin C and beta-carotene. Pectin and malic acid promote digestion. The tannins it contains act as antioxidants and also have an antiviral and antibacterial effect.

Not for people with kidney problems

If you are prone to kidney stones or gallstones or suffer from gout or rheumatism, it is better not to eat rhubarb. The high content of oxalic acid can exacerbate these health problems.

Better not to eat raw

100 grams of rhubarb contain about 460 milligrams of oxalic acid. Therefore, rhubarb should only be eaten boiled, steamed or baked, because the oxalic acid content is reduced when heated. Although oxalic acid is harmless to healthy people, it can damage tooth enamel and deplete calcium from the body.

For this reason, it is often recommended to consume rhubarb with calcium-rich foods such as dairy products or soy milk. However, if you only eat rhubarb compote or rhubarb cake every now and then, you don’t need to worry about this.

Free sowing calendar

Never miss the right moment to sow your favorite vegetables again!
